You probably wouldn’t expect to find flavorful hibachi plates inside a Bonham gas station—but that’s exactly what Harmony Express is serving up. This unassuming spot is quickly gaining a local following for its made-to-order meals, generous portions, and bold seasoning. Whether you’re grabbing it through the drive-thru or eating inside, it’s the kind of surprise that makes you glad you stopped.

Tucked inside a Bonham gas station, Harmony Express is serving up hibachi-style meals you wouldn’t expect in a place like this—but they’re doing it right. The menu keeps it simple but satisfying: chicken, steak, shrimp, salmon, or scallops, all cooked to order and served with your choice of fried rice, veggies, or noodles.

I ordered the steak, shrimp, and chicken hibachi combo with rice, and it didn’t disappoint. The steak is cooked to your preference—I went medium rare, and it was spot on. Everything was well seasoned and came with a side of yum yum sauce to seal the deal.

While waiting, I chatted with a local named Troy, who comes here twice a week and always seems satisfied. His go-to? The salmon with rice and vegetables. Shout out to Lindsey, who’s in the kitchen carefully packing each meal, double-checking every order, and making sure it’s right before it leaves the kitchen—and to the cooks who are behind the grill, cooking every order fresh with attention and consistency.

You can either drive around the gas station and pull up to what looks like an old fast-food drive-thru window—now repurposed for Harmony Express—and place your order directly with a real person at the window, no intercoms involved. You can also go inside to place your order in person and dine in, or call ahead and pick up at the window. It’s surprisingly convenient—but since everything is cooked fresh to order, expect about a 20-minute wait. Still, for the quality and flavor, it’s absolutely worth it.

It’s not gourmet—but it’s good. And hibachi in a gas station in Bonham? It’s better than it has any business being.
